20% CABERNET SAUVIGNON
After the singular 2014, the 2015 vintage proved to be a very regular year, almost like a manual. After a winter in the normal, rainy, mild but with a few days with temperatures below zero, the budding arrived on time in early April. Spring was characterized by a dry and sunny weather, ideal conditions for a regular vegetative development that culminated in a rapid and complete flowering at the end of May. From the month of June, water stress has progressively developed. July will be remembered as particularly torrid and dry, with maximum temperatures exceeding 30 ° C every single day of the month. The heat, combined with the absence of rains, made us fear a block of maturation and the need for an early harvest. Fortunately, the rain arrived around 10th August with heavy rainfall that allowed to release the ripening, bringing even a much fresher time during the final stage of maturation. This cool but sunny weather was maintained throughout the harvest period, allowing us to harvest very slowly, waiting for each vineyard to arrive at a perfect ripening point, combining a fresh and lively aromatic quality with a perfect phenolic ripeness with abundant tannins but silky and soft. Started on August 29th with Merlot, the harvest ended on October 12th with the last Cabernet Sauvignon and Petit Verdot.
